Delicious Oatmeal-Raisin Cookies

My favorite cookies! Oatmeal-raisin. No SOS (sugar, oil, or salt)

I think you will love my favorite oatmeal-raisin cookies. They’re based on Cathy Fisher’s recipe in her outstanding Whole Food Plant-Based cookbook and web site www.straightupfood.com. You can prepare 18 cookies in 25 minutes and cook them in 20. I usually do two batches which don’t take much longer.

Ingredients

Ingredients: 7 oz pitted chopped dates, 1 cup old fashioned rolled oats ground into flour with your blender, 1 1/2 cups oats, 2 TSP baking powder, 1 TSP cinnamon, 1 ½ TSP vanilla extract, ½ cup raisins (+extras for tops of cookies).

Steps: 1. Cover and soak chopped dates with water in a small bowl for 15 minutes. Preheat oven to 350 F. Line baking sheet with parchment paper or a silicone mat. 2. Grind 1 cup oats in a blender and add to a large bowel, stirring with 1 ½ cup oats, ½ cup raisins, 2 TSP baking powder, and 1 TSP cinnamon. 3. Blend the soaking dates and water; then add and stir with the large bowel mixture. 4. Use a soup spoon to scoop dough onto a baking sheet and form cookies with wet fingers pushing 2 raisins on top of each. Cookies will not change shape while cooking. 5. Bake for 20 minutes.
