They’re extremely healthy with complete vitamins and protein, extremely cheap, and quick to make.
I just made a tasty veggie burger recipe based on my favorite fellow nutritionist Jeff Novick, MS, RD’s “Fast Food” series.1 Here’s the recipe: 2, 14 oz cans no salt kidney beans (mashed), 1 cup rolled oats, 1 cup cooked brown rice, 4 TB salsa, Italian seasoning to taste. Stir together and make 12 patties. I make a double recipe and freeze them between wax paper pieces so I can have a burger any time by microwaving for 3 minutes.
Vary the ingredients.
You can vary the ingredients using different types of beans (but always some kidney beans for stability), corn, sweet potato, etc. another starch like quinoa, and spices like Mexican seasoning or curry powder. Check out Jeff’s Fast Food1 for details.
Another great source is Cathy Fisher’s “Straight Up Food”2 for a large selection of delicious Whole Food Plant-Based meals. Her burger, pictured above, has many more ingredients and has a preparation time of 20 minutes. Jeff’s “Fast Food” is 10 minutes if you use Success brand boil-in-a-bag rice.
Healthier and very inexpensive.
Not only is making your own burgers far healthier than eating ground-up cows with all their fat and antibiotics, but they are also healthier than the highly processed, isolated soy and isolated pea-based veggie burgers just out. In addition, each veggie patty costs around 25 cents while ground beef patties cost $1.45.
